Matcha Amore

Yes, I bought a new matcha bowl… I know, I know! So I’m going to be trying the matcha I recently brought back with me from Guizhou, China. 🍵

The beautiful Japanese hand-made bowl, and a new chasen, were purchased at a local (Calgary) Japanese shop, Nanao Kimono.[1]

The tea comes from the Zunyi, Guizhou (Feng Organic Tea Industry Co., Ltd.) and is labeled as Grade 1.[2] It comes in packets of 15ml of ground green leaves and is to be prepared with 60ml of boiled water (cooled to 85C water). You can use a chasen to whisk this, or use a shake bottle. I whisked this.

Dry leaves: well-ground, bright green, fresh vegetal scent

Liquor: very green, clear, good foam (my whisking skills are limited)

Aroma: fresh grassy scent

Flavour: unique mineral flavours (coming from high-altitude karst mountain geology), deep umami that lingers pleasantly in the mouth, very smooth.

I only purchased a single box of this matcha and am now regretting that choice. I wish I had purchased more! If you get the chance to try this matcha I highly recommend it.

[1] One of my favourite shops in Calgary. I also bought some organic matcha as well, but I will taste that another day.
