Cinnamon Heart Popcorn
I love popcorn. It is probably my favourite snack. I also adore spicy food…
Following is my recipe for cinnamon heart popcorn! 💖
In a saucepan, add about (I never measure unless baking):
- 2 tbsps coconut oil and heat over high heat 
- add a pinch of turmeric to the oil as it is heating (this makes the popcorn yellow - just like movie popcorn) 
- when the oil is melted and hot (not smoking), add enough corn kernels to cover a single layer of the saucepan 
- pop the popcorn (shake occasionally) remove from heat and dump into a large bowl 
I usually prepare the mixing ingredients before I start the cooking process. I like my salt (optional) ground to a powder, as it sticks better to the popcorn. I use a mortar and pestle for this. Cinnamon hearts are made with a combination of cinnamon and cayenne - so I get the ground versions pulled out. The salt, cayenne and cinnamon are liberally added to the popped corn (to taste).
If this is a savoury version, that is all I need, but if I feel like a sweet & salty version I add the following to the pan (after I’ve emptied the popped corn out and tossed it with the spices). I also reduce the heat to medium-low so nothing burns.
- 2 tbsps of butter 
- 1/4 cup (approximately) of honey - stir vigorously until it is melted well together and takes on a slightly different colour and thicker texture. I then add 
- a pinch of baking soda - remove from heat and stir, then pour over the popcorn. Stir until the spiced popcorn and honey caramel mixture are well-blended.
